3 Cheese Mac and Cheese

Creamy, cheesy and a crowd-pleaser at the best of times, this classic is good for any occasion!

Mac & Cheese Ingredients
500 g Macaroni
2 tbsp Butter
½ Onion, finely chopped
625 ml Cooking Rich™
2 tsp Dijon mustard
½ cup Mature cheddar cheese, grated
½ cup Pecorino cheese, grated
½ cup Fontina cheese, grated
Sprig of thyme Salt and freshly ground black pepper, to taste

 

Garnish Ingredients
½ cup Dried bread crumbs
½ cup White cheddar, grated

  1. Cook pasta in a large saucepan of boiling water for 10-12 minutes or until tender and drain well.
  2. Heat butter in large saucepan over medium heat.
  3. Add onion and sauté for 1 minute. Stir in Cooking Rich™.
  4. Return to stove and reduce to sauce consistency.
  5. Stir in remaining ingredients and macaroni.
  6. Spoon into a buttered large oven proof dish.
  7. Combine bread crumbs and cheddar cheese for topping in a small bowl.
  8. Sprinkle over top of macaroni.
  9. Brown under preheated grill for 5 minutes or until golden.
