2 Rich’s® Ring Donuts
4 Large eggs
1/4 Cup Versatie®
2 Tbsp Cooking oil
Cherry tomatoes
Bocconcini
Salt and pepper to taste
Micro herbs and rocket or lettuce, for serving.
  1. Allow Ring Donuts to thaw.
  2. Pre-heat the oven to 180°C.
  3. Lay the cherry tomatoes onto a baking sheet and drizzle with oil.
  4. Roast in the oven for 15 to 20 minutes.
  5. Set aside.
  6. Whisk eggs and Versatie® until combined.
  7. Heat some oil in a pan over medium heat.
  8. Add the egg mixture to the pan and wait for the edges to start firming up.
  9. Using a rubber spatula, gently push the eggs from one side of the pan to the other.
  10. Continue this process, pausing in between swipes to allow the egg mixture to cook through.
  11. Remove from the heat.
  12. Slice the Rich’s® Ring Donuts in half, top one half with micro herbs, rocket or lettuce.
  13. Spoon the scrambled eggs onto the greens.
  14. Plate the roasted tomatoes and the bocconcini along side.
  15. Season with salt and pepper.
  16. Top with the other donut half before serving.
