Cinnamon & Chilli Chocolate Ganache Tart

Base Ingredients
1 cup Mrs Rich’s® Chocolate Fudge Cookie
½ tsp Ground cinnamon
⅛ tsp Salt
5 tbsp Butter, melted


Filling Ingredients
500 ml Cooking Rich™
400g Bittersweet or Semisweet Chocolate, Chopped
½ cup Butter, cut into 8 pieces, room temperature
2 tsp Vanilla essence
2 Cinnamon quills
3 tsp Chilli flakes
¼ tsp Salt


For the Base:

  1. Preheat oven to 180°C
  2. Add all ingredients to a food processor, slowly adding the melted butter. Process until crumbs are moist and well combined.
  3. Remove from the food processor and press crumbs into a 25cm diameter tart pan with removable bottom.
  4. Bake until set, approximately 20 minutes. Transfer to a wire rack to cool completely.


For the Filling:

  1. In a medium saucepan, combine Cooking Rich™, chilli flakes and cinnamon and bring to a gentle simmer.
  2. Remove from heat and strain before adding to the chocolate; stir until melted. Slowly add the butter, 1 piece at a time; stir until smooth.
  3. Once all combined, pour the filling into the base and allow to chill until filling is completely set – approximately 20-25 minutes.
