Creamy Bourbon Butterscotch Pudding

625 ml Cooking Rich™
1 cup Milk
6 Egg yolks
1 tsp Vanilla essence
5 tbsp Bourbon
½ tsp Salt
¼ cup Butter
⅔ cup Light brown sugar
  1. In a large bowl, stir together Cooking Rich™, milk, vanilla, bourbon and salt and set aside.
  2. In a small bowl whisk the egg yolks until smooth and creamy and set aside.
  3. In medium saucepan over medium heat, slowly brown the butter and add the sugar and stir until well combined.
  4. Continue cooking until the sugar dissolves. Slowly add in the Cooking Rich™ mixture whisking consistently. Stirring frequently, allow to simmer gently for about 5 minutes.
  5. Remove from heat and slowly add in the egg yolks whisking quickly until well combined.
  6. Return the mixture back to a medium heat and whisk continuously for approximately 5 minutes until pudding thickens. Note: If the mixture produces small lumps continue to whisk until smooth.
  7. Once the mixture has thickened, transfer to a blender and pulse mixture briefly until smooth.
  8. Pour pudding into individual ramekins and allow to chill until completely set – approximately 3 hours.
