Coronation Chicken Roll
Sweet, tangy, spicy and bursting with flavour. We love the versatility of this coronation chicken recipe. Fill a croissant, roll or wrap!
| 30 | Rich’s® Artisan Breads™ Ciabatta 70g or 90g Rolls |
| 250 ml | Rich’s® Versatie® |
| 250 g | Sultanas |
| 3 | Large onions Sliced |
| 70 g | Mild curry powder |
| 2.5 g | Turmeric |
| 500 ml | Mayonnaise |
| 2 | Limes, zested and juiced |
| Salt | |
| Pepper | |
| 1 | Olive Oil |
- Thinly slice the onions.
- Place chicken breasts on an oven tray. Sprinkle the onion slices, turmeric, curry powder, olive oil and lime juice over.
- Bake for 15 min or until cooked.
- Mix the mayonnaise, sultanas, lime zest and Versatie® in a clean bowl.
- Remove the chicken. Set aside to cool.
- Separate the chicken breasts from the onions.
- Add the onions to the mayonnaise mixture.
- Thinly slice the chicken and add it to the mayonnaise mixture.
- Season with salt and pepper.
- Fill the roll with a spoonful of coronation chicken and lettuce. Serve as desired.
Hint: This mixture is best when used the next day.
