500 ml Rich’s® Cooking Rich™
24 Whole eggs
250 g Salted butter
1 Punnet Salt and pepper to taste
2 kg Chopped chives
3 kg Streaky bacon
Cherry tomatoes
200 ml Olive oil
150 g Brown sugar
24 Salt and pepper to taste Rich’s® Readibake® Freezer-to-oven 60g or 80g croissants.

  1. Bake the Readibake® Freezer-to-oven croissants as per handling instructions found in the case.
  2. Set aside for use later.
  3. Crack all the eggs into a deep oven pan, add the Cooking Rich™, butter, salt and pepper.
  4. Vigorously Whisk through.
  5. Separate the streaky bacon and lay flat onto lined baking sheets.
  6. Toss the cherry tomatoes, olive oil, brown sugar, salt and pepper into a separate deep oven pan.
  7. Place everything into an oven that has been pre-heated to 160 °C.
  8. Once the eggs visibly coagulate at the edges vigorously whisk.
  9. Whisk at regular intervals until the eggs are light, fluffy and cooked through.
  10. Remove the eggs once cooked. Sprinkle the eggs with chives.
  11. Remove the bacon once crispy then remove the tomatoes.
  1. Slice the croissants in half.
  2. Fill with a spoon full of scrambled eggs.
  3. Top with bacon and tomatoes.
  4. To serve, plate on request.
