24 Rich’s® Readibake Freezerto-Oven 60g or 80g croissants
250 ml Rich’s® Versatie®
24 Chicken Breasts
250 g Sultanas
3 Large onions Sliced
70 g Mild curry powder
2.5 g Turmeric
500 ml Mayonnaise
2 Limes, zested and juiced
Salt
Pepper
Olive Oil
  1. Thinly slice the onions.
  2. Place chicken breasts on an oven tray. Sprinkle the onion slices, turmeric, curry powder, olive oil and lime juice over.
  3. Bake for 15 min or until cooked.
  4. Mix the mayonnaise, sultanas, lime zest and Versatie® in a clean bowl.
  5. Remove the chicken. Set aside to cool.
  6. Separate the chicken breasts from the onions.
  7. Add the onions to the mayonnaise mixture.
  8. Thinly slice the chicken and add it to the mayonnaise mixture.
  9. Season with salt and pepper

Hint: This mixture is best when used the next day

  1. Fill the croissant with a spoonful of coronation chicken and lettuce. Serve as desired.
